Quick Quiche …for people who hate runny quiche!
2 Cups Cheese! I usually use Swiss or Sharp Cheddar
1/2 a small onion diced finely
2 Cups toppings of your choice!
(I suggest ham, bacon, browned well-drained sausage, broccoli chopped,
cauliflower chopped, spinach ,peppers or anything that will not add a lot of moisture when cooked)
1 Cup baking mix (Bisquick OR our homemade one-> RECIPE HERE)
2 Cups milk (I use skim but any will work)
1 Tteaspoon each of salt, pepper and garlic powder
#1. Preheat oven to 350
#2 Spray a quiche pan or 2 pie plates with non-stick spray
#3 put about 2c cheese at the bottom of the pan or split between the 2. Anykind! Swiss, cheddar, sharp…whatever as long as its real cheese. No Velveeta people
#4 finely dice 1/2 a small onion and sprinkle over the cheese
#5 add topping! This can be vegies, meat whatever you want! Up to two cups of stuff. Sprinkle this over the cheese and onion! (Here we do about a cup of bacon crumbles on swiss OR Ham, a cup and swiss)
#6 Blend in the blender 6 eggs, 2 cups of milk, 1 cup of Bisquick a teaspoon each of salt, pepper and garlic powder.
#7 Pour over stuff in pans! (split equally if using two pans!) making sure the toppings get coated.
#8 Bake until golden brown on the top and a knife comes out mostly clean. (About 45 -50 minutes)
#9 Let rest on counter for about 10 minutes so it sets!
#10 ENJOY!! This also microwaves well!
I have adapted this recipe over most my life, to get to where our family enjoys it! This is great for breakfast, lunch or dinner! Its also great with some salsa! If you choose to make cheese jalapeno sour cream on top is great!
